Laura McIntosh's recipe of the week: Farro, Sungold, and Basil Backyard salad

Beginning Friday, March 11, local celebrity and TV personality Laura McIntosh will offer a new recipe each week. This week's recipe is for a Farro, Sungold, and Basil Backyard Salad.

Ingredients:
Serves 6

1 1/2 Cups Farro
1/2 Red Onion, julienned
1 Head of Fennel, julienned
1/2 Cup Extra Virgin Olive Oil,
1/4 Cup Sherry Vinegar,
1 Each Basket of Sungold Cherry Tomatoes, halved 1 Each Basil Bunch, cut in chiffonade, Kosher Salt and Freshly Ground Black Pepper

Cooking Instructions:

In a pot of boiling salted water, cook the farro until done, about 10 minutes. Drain. Transfer to large bowl.

Great Stockton Asparagus Dine Out begins April 1

STOCKTON - Local restaurants featuring locally grown asparagus will be showcased during the first part of April for the Great Stockton Asparagus Dine Out, April 1 - 10. Restaurants will serve locally grown asparagus in a variety of dishes in celebration of our most famous spear and the upcoming Stockton Asparagus Festival (April 15-17).

Over 20 restaurants are expected to participate.

"The Great Stockton Asparagus Dine Out was created by the Stockton Conference & Visitors Bureau, following the successful fall-time Stockton Restaurant Week, to showcase locally grown asparagus and its use in local cuisine!" noted Wes Rhea, Director of the Stockton Conference & Visitors Bureau. "The trend of focusing on local cuisine that utilizes locally grown and sourced ingredients is growing nationwide. The Dine Out is here to remind locals of the rich bounty of locally grown asparagus available fresh only this time of year.
